SPINACH, MUSHROOM, AND CORN SANDWICH

INGREDIENTS:

1. Bread Slices: 2

2. Corn: 1 Cup

3. Mushrooms: 1 Cup

4. Spinach: 1 Cup (Blanched)

5. Green Chutney

6. Herbs (Oregano, Chili Flakes)

7. Black Pepper and Salt


METHOD:

1) In a Cast Iron pan, heat 1-2 tbsp oil, add 1 cup corn, mushrooms, a dash of black pepper and salt and stir for 1 minute.

2) Add chopped spinach and cook till it for about 2 min

3) Turn off stove and add oregano, red chili flakes and mix well

4) Let the filling cool

5) Pre-heat panini grill // sandwich maker or pan

6) Put another slice or bread on top, grill till golden on both sides.

7) Warm, healthy and tasty grilled mushroom, corn and spinach sandwich is ready.
