Cous Cous Salad
1. Soak 2 Tsp of couscous in 1 cup of hot water for 5 minutes.
2. Allow it to absorb water, fluff with a fork and let it cook.
3. Combine it with diced vegetables. Bell peppers, onions, cherry tomatoes, lettuce, baby spinach leaves.
4. Drizzle the salad with a Home Made Dressing
For the dressing: Combine
- 1/2 tsp lemon juice
- 2 -3 tsp extra virgin olive oil
- 1/4 tsp balsamic or apple cider vinegar
- 1 tsp honey
- a dash of salt n pepper
