Quinoa, Chickpeas and Avocado Salad

- In a mixing bowl, combine 1 cup boiled chickpeas, 1 cup diced avocado and 1 cup boiled quinoa.

- Toss this with home made salad dressing.

For Home Made Salad Dressing,

- Combine 1/2 lemon juice, 2 tsp extra virgin olive oil, 1/4 tsp balsamic vinegar (optional), 1 tsp honey and a dash of Salt and Pepper.
